Teriyaki tofu stir fry

TERIYAKI TOFU STIR FRY

Ingredients
 For the tofu marinade:

1 block firm or extra-firm tofu
¼ cup soy sauce
2 cloves garlic, minced
1 tsp grated ginger
1 tbsp lemon or lime juice
1 tbsp honey (optional)
½ tsp salt (adjust to taste)

For the stir-fry:

1 tbsp oil (sesame or vegetable)
1 large onion, sliced
1 bell pepper,
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
½ cup teriyaki sauce

Instructions
1. Press the Tofu (if necessary)
      Wrap the tofu in a clean towel and place a heavy object on top. Press for 15-20 minutes to remove excess moisture.

2. Prepare the Marinade 
      In a bowl, whisk together soy sauce, garlic, ginger, lemon/lime juice, honey, and salt until well combined.

3. Marinate the Tofu 
     Slice the tofu into cubes, slices, or triangles.
     Place it in a shallow dish or resealable bag and pour the marinade over it.
     Let it soak for at least an hour (I would recommend overnight for a richer flavor).

 4. Cook the Tofu 
     Heat 1 tbsp oil in a pan over medium heat.
     Add marinated tofu (save the marinade for later) and cook until golden brown on all  sides (about 5-7 minutes).
     Remove from the pan and set aside.

5. Stir-Fry the Veggies 
    In the same pan, add onions, bell peppers, broccoli, and carrots.
    Stir-fry for 3-5 minutes until slightly tender but still crisp.

6. Season & Sauce 
    Add in salt, black pepper, garlic powder, onion powder, and paprika.
    Pour in teriyaki sauce and the reserved tofu marinade.
    Stir everything together and cook for 2 more minutes until the sauce thickens.

7. Combine & Serve 
    Add the crispy tofu back to the pan and toss to coat.
    Serve hot over rice or noodles
