Roasted Vegetable Soup

Ingredients:

2 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

3 carrots, chopped

2 celery stalks, chopped

1 can diced tomatoes

4 cups vegetable broth

Salt and pepper to taste

Instructions:

1.    Preheat oven to 425°F (220°C).

2.    In a large bowl, toss together olive oil, onion, garlic, carrots, and celery.

3.    Spread the mixture on a baking sheet and roast for 25-30 minutes.

4.    In a large pot, combine roasted vegetables and diced tomatoes.

Pour in vegetable broth and bring to a simmer.

5.    Purée the soup with an immersion blender or regular blender.
