 Mediterranean Quinoa Salad

Ingredients:

1 cup quinoa

2 cups water

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

1/4 cup olive oil

Salt and pepper to taste

 

Instructions:

1. Rinse quinoa under cold water and then combine it with water in a pot.

Bring it to a boil, then reduce heat and cover, letting it simmer for about 15 minutes or

until water is absorbed.

2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion,

feta cheese, and parsley.

3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

Pour over the salad and mix gently.

Chill in the fridge for at least 30 minutes before serving
