  Carbonara Florentine is a delicious fusion of classic Italian Carbonara with a Florentine twist, which typically involves spinach. Here's how to make it:

Ingredients (For 2-3 servings):

  •     200g spaghetti (or fettuccine)
  •     2 large eggs
  •     ½ cup grated Parmesan cheese
  •     100g pancetta or bacon, diced
  •     2 cloves garlic, minced
  •     1 cup fresh spinach, chopped
  •     ½ teaspoon black pepper
  •     Salt to taste
  •     1 tablespoon olive oil


Instructions


1. Cook the Pasta:
  •     Bring a pot of salted water to a boil and cook the pasta until al dente.
  •     Reserve ½ cup of pasta water, then drain the pasta.
2. Prepare the Egg Mixture:
  •     In a bowl, whisk together eggs, grated Parmesan, and black pepper.
3. Cook the Pancetta & Spinach:
  •     In a pan over medium heat, add olive oil and cook the diced pancetta or bacon until crispy.
  •     Add garlic and sauté for 30 seconds until fragrant.
  •     Stir in chopped spinach and cook until wilted.
4. Combine Everything:
  •     Reduce heat to low, add the drained pasta to the pan, and toss to combine with the pancetta and spinach.
  •     Remove from heat and slowly pour in the egg-Parmesan mixture while stirring quickly (to avoid scrambling the eggs).
  •     If needed, add a bit of the reserved pasta water to create a silky sauce.
5. Serve:
  •     Garnish with more Parmesan, extra black pepper, and an optional sprinkle of red pepper flakes.
