Carbonara Florentine is a delicious fusion of classic Italian Carbonara with a Florentine twist, which typically involves spinach. Here's how to make it:
Ingredients (For 2-3 servings):
- 200g spaghetti (or fettuccine)
- 2 large eggs
- ½ cup grated Parmesan cheese
- 100g pancetta or bacon, diced
- 2 cloves garlic, minced
- 1 cup fresh spinach, chopped
- ½ teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil
Instructions
1. Cook the Pasta:
- Bring a pot of salted water to a boil and cook the pasta until al dente.
- Reserve ½ cup of pasta water, then drain the pasta.
2. Prepare the Egg Mixture:
- In a bowl, whisk together eggs, grated Parmesan, and black pepper.
3. Cook the Pancetta & Spinach:
- In a pan over medium heat, add olive oil and cook the diced pancetta or bacon until crispy.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in chopped spinach and cook until wilted.
4. Combine Everything:
- Reduce heat to low, add the drained pasta to the pan, and toss to combine with the pancetta and spinach.
- Remove from heat and slowly pour in the egg-Parmesan mixture while stirring quickly (to avoid scrambling the eggs).
- If needed, add a bit of the reserved pasta water to create a silky sauce.
5. Serve:
- Garnish with more Parmesan, extra black pepper, and an optional sprinkle of red pepper flakes.
